Next time you are feeling the urge to devour a bag of chips, try reaching for this snack instead. Chickpeas are high in protein and fiber. These is an especially great option for vegetarians, vegans, and those following a gluten free diet.
1 can (15 oz.) chickpeas rinsed and drained
2 Tbsp. olive oil
1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. fine sea salt
1/8 tsp. cayenne (optional)
Preheat oven to 400 F. Line a rimmed baking sheet with parchment paper. Pour chickpeas onto a clean kitchen towel and thoroughly pat dry
Place chickpeas on the baking sheet and toss with the oil, paprika, garlic powder, salt, and cayenne. Spread out in a single layer.
Bake for 20 minutes, stir, and return to the oven for 10 minutes, or until extra crispy. Allow the chickpeas to cool completely prior to serving
