Peanut Butter Energy Bites

Whether you are taking a day trip hiking, road trip, or looking for a good post workout snack, these energy bites are a good option. They are protein packed with a combination of healthy fats, whole grains, and fiber that will keep you satisfied.


Ingredients:

12 medjool dates pitted

1/2 cup rolled oats

1/2 cup almonds

1/2 cup peanut butter

3 Tbsp flax seeds ground

1 tsp vanilla extract

pinch of salt


Directions:

  1. Place dates, rolled oats, and almonds in a high speed food processor and process on high for about a minute.

  2. Add the rest of the ingredients and process for another 1-2 minutes until your dough is formed

  3. Check texture by pinching the dough between your fingers. It should be sticky and able to keep it's shape. If it's too dry add water

  4. Scoop out the dough and roll between your palms to form balls. Enjoy!
